Gluten-Free Fried Cornmeal Calamari WITH SPICY MAYO

Ingredients:

  • 1 lb squid

  • 1 cup milk (I used almond milk)

  • Juice from half a lemon

  • 1 tsp salt

  • 1/3 cup gluten-free all purpose flour

  • 1/2 cup corn flour

  • 1 tsp corn starch

  • 1 tsp salt

  • 1/2 tsp cayenne pepper

  • 1 quart vegetable oil 

Sauce:

  • 2 tbsp mayo

  • 2 tsp sriracha

  • 1 tsp soy sauce

  • Juice of half a lime

Steps:

  1. Prepare the squid by separating the tentacles and cutting the body into rings. 

  2. Mix together the milk, lemon juice, and salt in a bowl. Add in the rings and tentacles. Cover and let sit for at least 30 mins. 

  3. In another bowl, combine the flour, corn flour, corn starch, salt, and cayenne pepper. 

  4. Remove the tubes and tentacles from the milk and toss in flour mix. 

  5. Add the oil to a pot and heat on medium until it reaches 350°F. 

  6. While the oil is heating, combine all of the sauce ingredients into a bowl and mix. 

  7. Add in your calamari to the oil and cook for a few minutes until golden brown. (Some tips for frying: when the bubbling slows down and the color is looking almost to the point you want it at, take it out)

  8. Allow the calamari to cool and enjoy :)
