Gluten-Free Almond Butter Cookies
Ingredients:
1/3 cup almond butter
1/3 cup butter (I used vegan butter)
3/4 cup brown sugar
1/4 cup white sugar
1 egg
2 tsp vanilla extract
2 1/2 cups almond flour
1/2 tsp baking soda
1/2 tsp salt
3/4 cup chocolate chips
Steps:
Preheat the oven to 350°F.
Cream together the almond butter, butter, brown sugar, and white sugar in a mixing bowl on medium speed.
Add in the egg and vanilla extract until fully combined.
n a separate bowl combine the almond flour, baking soda, and salt.
Add the dry ingredients to the wet ingredients and mix well.
Finally add in the chocolate chips.
Spoon into heaping tablespoons and place on a baking sheet prepared with parchment paper.
Bake for 11 minutes (the cookies will still seem very soft when you take them out, but be careful not to over-bake them)
Allow to cool and enjoy!
