Gluten-Free Candied Ginger Blondies
Ingredients:
12 tbsp melted butter
3/4 cup light brown sugar
1/4 cup granulated sugar
1 egg
1 1/2 tsp vanilla extract
1 cup + 2 tbsp gluten-free all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1/2 cup candied ginger (small pieces)
1/4 dark chocolate chips
Steps:
Preheat the oven to 350°F. Spray an 8" square baking dish and line with parchment.
Combine the melted butter with both sugars in a mixing bowl and beat until fully incorporated, about 2 minutes.
Add the egg and vanilla extract, mixing after each.
Combine the flour, salt, and baking powder in a separate bowl then add to your wet ingredients.
Beat until the batter is fully mixed.
Chop your candied ginger into small pieces (the size can vary based on your preference). Make sure to separate the pieces with your hands so that they do not clump together.
Sprinkle the ginger into the batter a little bit at a time, mixing as you go to avoid the ginger pieces sticking together.
Add the chocolate chips and mix well.
Pour your batter into the prepared dish and bake for about 35 mins, looking for the edges to brown and the center to firm.
Allow your blondies to cool before cutting and enjoy!
