Gluten-Free LEMON POPPY SEED LOAF

Ingredients:

  • 2 cups GF all-purpose flour

  • 2 tsp baking powder

  • 1 tsp xantham gum

  • 1/2 tsp salt

  • 1/4 cup poppy seeds

  • 2 tbsp lemon zest, ~4 lemons 

  • 1 cup sugar

  • 1/2 cup canola oil

  • 3 eggs

  • 3/4 cup almond milk

  • 2 tbsp lemon juice

Steps:

  1. Preheat the oven to 350°F. Grease a 9x4inch loaf dish. 

  2. Combine the flour, baking powder, xantham gum, salt, poppy seeds, and zest in a large mixing bowl.

  3. In another bowl, add the sugar, oil, eggs, milk, and lemon juice and whisk until fully combined.

  4. Add the wet ingredients to the dry ingredients and mix well.

  5. Pour batter into prepared loaf pan. 

  6. Bake for  45-50 mins or until fully cooked through. 

  7. Enjoy!
