Gluten-Free Banana Oat Pancakes

Ingredients: 

Pancakes:

  • 1 ripe banana

  • 1/2 cup gluten-free rolled oats

  • 1 egg

  • 1 tbsp almond milk

Caramelized Banana Slices:

  • 1 banana

  • 2 tbsp vegan butter

  • sprinkle brown sugar

  • sprinkle cinnamon

Steps:

  1. Mix together the banana and oats. 

  2. Add in the egg and almond milk, mixing after each. 

  3. Set aside the pancake mixture to let the oats soften. 

  4. Start on the caramelized banana. 

  5. Add sliced banana to a pan with butter and then sprinkle on brown sugar and cinnamon. 

  6. Allow the bananas to brown, mixing around often enough to avoid burning. 

  7. When they have reached a good color and start to show some signs of stickiness they are ready. 

  8. Set the slices aside and add pancake batter to a hot pan over medium heat. 

  9. Prepare toppings, I mixed together some almond butter and maple syrup for a maple almond syrup. 

  10. Once everything is ready, top your pancakes and enjoy!
