Gluten-Free Zucchini Fries
Ingredients:
Fries:
1 zucchini
1/2 cup gluten-free breadcrumbs
(you can add fresh parsley, parmesan, and any seasoning to the bread crumb mix as you prefer)
1 egg
Dip:
2 tbsp greek yogurt
1 tsp lemon juice
1 tsp lime juice
1 tsp parsley
black pepper
Steps:
Preheat the oven to 350°F.
Cut the zucchini into fairly equal fry shaped pieces.
Mix together the breadcrumbs and any additions into a shallow bowl or plate.
Mix up the egg in a small bowl and dip the zucchini into the egg, then into the breadcrumb mix.
Place on a baking sheet.
Bake for about 25/30 minutes, flipping halfway through.
Add together all dip ingredients in a bowl and enjoy!
