Gluten-Free Zucchini Fries

Ingredients: 

Fries:

  • 1 zucchini

  • 1/2 cup gluten-free breadcrumbs

  • (you can add fresh parsley, parmesan, and any seasoning to the bread crumb mix as you prefer)

  • 1 egg

Dip:

  • 2 tbsp greek yogurt

  • 1 tsp lemon juice

  • 1 tsp lime juice

  • 1 tsp parsley

  • black pepper

Steps:

  1. Preheat the oven to 350°F. 

  2. Cut the zucchini into fairly equal fry shaped pieces. 

  3. Mix together the breadcrumbs and any additions into a shallow bowl or plate. 

  4. Mix up the egg in a small bowl and dip the zucchini into the egg, then into the breadcrumb mix.

  5. Place on a baking sheet. 

  6. Bake for about 25/30 minutes, flipping halfway through. 

  7. Add together all dip ingredients in a bowl and enjoy!
