Gluten-Free Pistachio Ginger Cookies

Ingredients:

  • 3/4 cup butter, softened

  • 1/2 cup brown sugar

  • 1/2 cup granulated sugar

  • 1 egg

  • 2 tsp vanilla

  • 1 1/2 cups all-purpose GF flour

  • 1/4 sweet rice flour 

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp xantham gum 

  • 1/4 tsp salt

  • 1/2 cup powdered pistachio

  • 1/4 cup chopped pistachio

  • 1/2 cup candied ginger, chopped

Steps:

  1. Preheat the oven to 350°F. 

  2. Using a blender, blend a 1/2 cup of pistachios into a powder. Use a mallet to break another 1/4 cup into small chunks. 

  3. Cream together the butter and sugars until light and fluffy. 

  4. Add in the egg and vanilla, mixing well. 

  5. In a separate bowl combine the flour, sweet rice flour, baking powder, baking soda, xantham gum, salt, and powdered pistachio.

  6. Add the dry ingredients to the wet and mix until fully combined. 

  7. Fold in the chopped pistachios and candied ginger. 

  8. Scoop heaping tablespoons of the batter onto a sheet pan and freeze each pan for 10/15 minutes before baking. 

  9. Bake for 12 minutes.
