Gluten-Free Raspberry Jam Bars
Yield: 8x8 in pan
Ingredients:
1/2 cup butter, softened
1/2 cup granulated sugar
1/4 cup brown sugar
1 egg
1/2 tsp vanilla extract
1 1/4 cup all purpose GF flour
3/4 cup GF rolled oats
1/2 cup raspberry jam
1/4 cup crushed roasted almonds
Steps:
Preheat the oven to 350°F. Prepare a square baking dish with cooking spray and parchment paper.
Cream the butter together with both sugars, beating for a few minutes until light and fluffy.
Add in the egg and vanilla extract. Mix until fully combined.
Add the gluten-free flour and oats, and mix well.
Place the dough into the baking dish, leaving a 1/2 cup to use for topping, and press flat. This layer should be about a 1/2 inch thick.
Add jam on top and flatten into a thin layer.
Add the crushed almonds to the remaining dough and sprinkle on top of the jam layer.
Bake for about 40 minutes until the top is golden brown.
Allow to cool and enjoy!
