Cheese Biscuits with Fig and Herb
Ingredients:
2 cups gluten-free flour blend
1 tbsp baking powder
1 tsp salt
1 stick butter, cold
1 cup grated gruyere (or cheese of choice)
1/3 cup chopped fig
1 tbsp fresh rosemary, minced (or herb mixture of choice)
3/4 cup milk
1 tbsp melted butter for topping (or olive oil)
Gluten-Free Flour Blend:
2 cups brown rice flour
2/3 cup potato starch
1/3 cup tapioca starch
Steps:
Preheat the oven to 350*F. Prepare two baking sheets with parchment.
If you are using dried figs, soak them in warm water for 10 minutes prior to chopping and adding to the dough.
Combine the flour, baking powder, and salt and whisk together.
Cut the butter into the dry ingredients either by hand or with a stand mixer until the dough will clump when held in a fist and only small pieces of butter are visible. Then add the milk.
Roll out the dough until it reaches anywhere between 1 inch- 1/2 inch thickness depending on your preference.
Cut out the biscuits into whatever shape you would like. You can re-roll and cut the dough until you have used it all.
Place the biscuits onto the baking sheet and brush with melted butter or oil.
Bake for about 15 minutes, or until they reach a desired golden brown color. Enjoy!
