Gluten-Free Baked Pumpkin Donuts

Ingredients:

  • 1/4 cup olive oil

  • 3 tbsp almond milk 

  • 1/2 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 tsp vanilla

  • 3 eggs

  • 1 can pumpkin puree

  • 2 cups flour

  • 1 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1 1/2 tsp pumpkin pie spice

  • 1 tsp salt

  • Cinnamon Sugar:

  • 1 cup sugar

  • 2 tbsp cinnamon

Steps:

  1. Preheat the oven to 325°F.

  2. Cream together the olive oil, almond milk, and sugars. 

  3. Add in the vanilla and eggs and combine well.

  4. Add in the can of pumpkin puree and mix together. 

  5. In a separate bowl combine the flour, baking powder, baking soda, pumpkin pie spice, and salt. 

  6. Add the dry ingredients to the wet and mix well. 

  7. Spray a donut pan and pipe the batter into the pan. 

  8. Bake for 15 minutes. 

  9. Mix together the sugar and cinnamon in a bowl. 

  10. Once the donuts have cooled, dip and cover each one in cinnamon sugar. 

  11. Enjoy!
