Gluten-Free Baked Pumpkin Donuts
Ingredients:
1/4 cup olive oil
3 tbsp almond milk
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp vanilla
3 eggs
1 can pumpkin puree
2 cups flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp pumpkin pie spice
1 tsp salt
Cinnamon Sugar:
1 cup sugar
2 tbsp cinnamon
Steps:
Preheat the oven to 325°F.
Cream together the olive oil, almond milk, and sugars.
Add in the vanilla and eggs and combine well.
Add in the can of pumpkin puree and mix together.
In a separate bowl combine the flour, baking powder, baking soda, pumpkin pie spice, and salt.
Add the dry ingredients to the wet and mix well.
Spray a donut pan and pipe the batter into the pan.
Bake for 15 minutes.
Mix together the sugar and cinnamon in a bowl.
Once the donuts have cooled, dip and cover each one in cinnamon sugar.
