Gluten-Free Pistachio Chocolate Chip Cookies
Yield: 20 large cookies
Ingredients:
Dry
1 1/2 cups GF all-purpose flour
1 tsp xantham gum (omit if your flour includes it)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
Wet
1/2 cup salted butter, room temperature
1/2 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 tsp vanilla extract
3/4 cup chocolate chips
3/4 cup roasted pistachios, (1/2 cup ground + 1/4 crushed)*
Steps:
Preheat the oven to 350°F.
Mix together all of the dry ingredients and set aside.
Cream together butter and sugars until light and fluffy. Add the egg and vanilla extract and mix well.
Add the dry ingredients into the wet ingredients and mix until fully combined. Fold in chocolate chips and ground pistachio.
Scoop heaping tablespoons and roll the dough into a ball (it will be sticky). Place shaped dough on a prepared parchment baking sheet and flatten into a 1/2 inch tall disc with your fingers. Sprinkle crushed pistachios on top of the cookies.
Bake for ~12 minutes and enjoy!
*If you have to use salted pistachios omit the salt in the recipe. If your pistachios are unsalted, feel free to add more sea salt on top of the final cookies!
