Easy Gluten-Free Banana BreaD
Ingredients:
Dry:
1 1/2 cups GF all purpose flour
1/2 cup sugar
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
Wet:
2-3 ripe bananas
2 eggs
1/4 cup olive oil
1 tsp vanilla extract
1/4 cup cacao nibs
Steps:
Preheat the oven to 350°F.
In a large mixing bowl, mash bananas (use 2 if larger or 3 if smaller). Add the rest of the wet ingredients and mix till combined.
Mix together all the dry ingredients in a separate bowl.
Add the dry mixture to the wet and combine well.
Pour mixture into prepared bread pan.
Sprinkle cacao nibs evenly on top and bake for ~60 minutes.*
Cool and enjoy!
(*I've made this recipe in a variety of ovens at 350°F and noticed that the bake time can differ greatly based on the oven I use. I'm not sure why, but if you are making this for the first time check it every 10 minutes after its been in for 30 mins to make sure it doesn't over bake)
