Gluten-Free Strawberry Almond Skillet CakE
Ingredients:
1/2 cup butter, softened
3/4 cup sugar
2 eggs
1 tsp vanilla extract
1/2 tsp almond extract
1/4 cup sour cream
1/2 cup almond flour
1 cup gluten-free all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup strawberries, quartered
1/2 cup strawberries, halved
1/4 cup sliced almonds
Steps:
Preheat the oven to 350°F.
In a stand mixer, cream together the butter and sugar until light and fluffy. Add in the eggs, vanilla, almond extract, and sour cream, then mix to combine.
In another bowl, mix together the almond flour, flour, baking powder, baking soda, and salt.
Add the wet ingredients to the dry ingredients and mix to combine.
Fold in the quartered strawberries. Add the batter to a buttered cast iron pan.*
Place the remaining strawberry halves on top, pressing lightly into the batter. Sprinkle sliced almonds on top.
Bake for ~45 minutes, until a toothpick comes out clean.
Allow to cool and sprinkle the top with powdered sugar. Enjoy!
* I used a deep 8in cast iron, but you could use a regular 9in or 10in pan as well, just bake for a shorter amount of time!
