Gluten-Free Zucchini Bread

Ingredients:

  • 1 1/2 cups all-purpose GF flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 1 1/2 tsp cinnamon

  • 2 tsp ground ginger

  • 1/4 cup granulated sugar

  • 3/4 cup brown sugar

  • 3 eggs

  • 1/2 cup sour cream

  • 1 1/2 tsp pure vanilla extract

  • 1 1/2 cups shredded zucchini

  • 1 cup chopped walnuts

Steps:

  1. Preheat the oven to 350°F.

  2. Mix together the flour, baking powder, baking soda, salt, cinnamon, and ginger. Set aside.

  3. Whisk together the sugars and eggs.

  4. Shred the zucchini and press out as much liquid as possible. Add in the sour cream, vanilla extract, and shredded zucchini.

  5. Add the dry ingredients into the wet ingredients and whisk to combine.

  6. Fold in the walnuts.

  7. Pour the batter into a prepared bread pan. Bake for ~50 minutes, until a toothpick comes out clean.  

  8. Cool and enjoy!
